Seasoned egg ramen|Chukasoba Ranju

Honancho Station on the Marunouchi Line of the Tokyo Subway. The excellent niboshi ramen restaurant “Chukasoba Ranju” is located near that station.

Although its business hours are short, from 12:00 to 14:00 on weekdays, it is still famous as a niboshi ramen (dried sardine ramen) restaurant with a long line of customers.
You will be served really delicious niboshi ramen(dried sardine ramen).

When you enter the restaurant and take a seat, you can experience a slightly nostalgic ordering process that feels like old Japan, where you tell them your order verbally and place the payment for it on the counter.

While waiting for your ramen to be made, you can watch the owner’s energetic movements as he drains the water right in front of you, and you can tell from his every movement how serious he is about making his ramen.

I ordered the “Ajitama soba”(seasoned egg ramen). The soup is an elegant soup with a distinctive flavor and umami of dried sardines, which gives it a mellow and sharp taste. The medium-thin, straight noodles that go well with the soup have a rich wheat flavor and a moderate hardness that satisfies the mouth’s appetite.

The most remarkable thing about this ramen is undoubtedly its broth. While it fills the mouth with the rich flavor of dried sardines, the aftertaste is surprisingly refreshing and light.

The ramen is topped with a large piece of ultra-low-temperature-cooked rare pork char-siu pork, tender bamboo shoots soaked in broth, green onions, seasoned eggs, and nori (seaweed). Each enhances the flavor of the ramen and together they add to the deliciousness of the dish.

Of particular note is the red-colored char-siu pork. Just by looking at it, you can tell that it looks delicious! You can tell just by looking at it. This char-siu combines the aroma of being grilled with the flavor of being smoked, and you can enjoy that flavor. Not only that, but the char-siu is cut into generous slices just before serving, which makes it more palatable. The juicy flavor of the meat overflows when you take a bite, and you will be truly satisfied with the taste.

Nori(Seaweed) and green onions also play an important role in the ramen and enhance the overall flavor of the ramen. In particular, these ingredients create a perfect balance between the soup and noodles, further enhancing the overall flavor of the ramen.

Along with the imposing atmosphere of the famous restaurant that you can feel from inside the restaurant, you will be able to enjoy the supreme niboshi ramen(dried sardine ramen) that you can only experience here.
