About a 3-minute walk from Shinjuku-Gyoenmae Station in Tokyo. “Shina-soba Sawada” is located in a back alley with a calm atmosphere near Shinjuku Hanazono Park.
The owner trained at several famous ramen restaurants in Tokyo before finally establishing his own restaurant.
The restaurant’s two representative dishes are “Shina-soba” with soy sauce broth and “Shiro(White) Shina-soba” with white soy sauce. In addition, popular toppings such as meat and prawns are available. In addition, “Kombu-sui Tsukemen”(Kelp stock dipping noodle)has been newly added to the menu.
The interior of the restaurant is a stylish and luxurious space with a white-wood counter seating about 10.
The special shina-soba features a soy sauce broth made from minced chicken and pork and Rausu kelp. The rich flavor of the dashi broth supports the overall taste of the dish, which is made without any seasoning or additives. The sauce is a blend of five different types of soy sauce, and the finishing oil is made from dried boiled fish oil and chicken oil.
