Soy sauce ramen|Harukiya

I went to “Harukiya”, a ramen restaurant in Ogikubo, Tokyo. There were a few people waiting in front of the restaurant, but the system is to purchase a meal ticket from a ticket vending machine located outside the restaurant before waiting in line. Perhaps because it was Saturday noon, we were able to enter the restaurant after standing in line for about 15 minutes.

“Harukiya” is popular for its standard “Chuka Soba” (Soy sauce ramen). Of course, I ordered “Chuka Soba” (Soy sauce ramen) as well. After ordering, I was served my ramen not too long after placing my order.

The appearance of the ramen was very simple, giving the impression that it was the “Chuka Soba” (Soy sauce ramen) of the royal road. The soup is made of high-quality chicken and niboshi (dried sardines) broth, and the first sip is enough to make you say, “Yum! The flavor is strong and very tasty. The umami flavor is strong and very tasty.

The noodles are medium-thick and frizzy, and the char siu pork is firm and meaty to match the soup. This was again a perfect balance, and it was like tasting a top-class “Chuka soba” (Soy sauce ramen). I can confidently say that no one can dislike this flavor of ramen.

It is generally described as old-fashioned ramen, but it is by no means old-fashioned, and is one of the very best ramen available today.
