Salt ramen|Hakodate sio ramen Goryoukaku
I visited “Hakodate sio ramen Goryoukaku”, a ramen restaurant in Ogikubo, Tokyo. It was Saturday noon, but there was no line and we were shown to our seats after a 10-minute wait. Once inside the restaurant, you purchase a meal ticket from the ticket vending machine near the entrance and place your order.
Only “Salt ramen” is on the menu, which is graceful! The restaurant is filled with Hakodate goods!
“Hakodate sio ramen Goryoukaku” offers only salt ramen on the menu. The interior is decorated with many Hakodate-related goods, strongly emphasizing the “Hakodate” theme. A poster of Toshizo Hijikata was also on the wall. While I was admiring the Hakodate goods, my ramen was quickly served.
Deep-flavored soup, perfectly matched noodles
The salted soup, made with Hokkaido kelp and Sarufutsu scallops, combines a clean animal flavor with the mild umami of the scallops and kelp, and spreads a pure umami flavor with a mild sea aroma. The thin, straight noodles with moderate water content have just the right amount of firmness and absorb the soup over time, strengthening the sense of unity of the entire bowl.
The toppings include all-purpose green onion, bamboo shoots, char siu pork, and fu. The bamboo shoots soak up the flavor well, and the roasted pork belly is characterized by its savory grill marks and melt-in-your-mouth fatty meat. The fu absorbs so much of the broth that by the time you finish the noodles, the broth is slowly spreading in your mouth.

With its austere noren (traditional Japanese store curtain) and posters and souvenirs of Hokkaido, the interior of the restaurant gives the impression of being in a ramen shop or diner in Hakodate, even though you are in Tokyo. The “salt ramen” with its rich umami and gentle flavor was heartwarming and delicious.
