Special ginger soy sauce ramen|Shoga-shoyu-senmon Gamushara Hatagaya-honten

We have enjoyed the “Tokusei shoga shoyu ramen” (Special ginger soy sauce ramen) at “Shoga-shoyu-senmon Gamushara Hatagaya-honten”, a ramen restaurant located near Hatagaya Station in Tokyo. This is the first and main branch of the Gabushara group, which is one of the most popular among the group’s six branches and is well known among the locals.

“Shoga-shoyu-senmon Gamushara Hatagaya-honten” serves Nagaoka Ginger Soy Sauce Ramen, one of Niigata’s local ramen dishes.
The “Tokusei shoga shoyu ramen” (Special ginger soy sauce ramen) we had this time features a clear, brown, light soy sauce-flavored soup. The refined soy sauce flavor with a hint of sweetness and a gentle ginger flavor is exquisite, and the balance of soy sauce and ginger is very good.

It is very filling, with a variety of ingredients: green onion, spinach, naruto, kikurage, nori (seaweed), boiled egg, and chashu pork. The boiled egg is a whole egg, well seasoned and delicious. The light, gingery aftertaste keeps the ramen from feeling greasy, even when it is loaded with a lot of back fat.

The noodles were smart straight noodles and appeared to be made by Mikawaya.
These noodles are very well balanced as ramen noodles that intertwine well with the soup and ingredients.

The ginger flavor is not overpowering and the overall taste is gentle, but there is grated ginger and ginger vinegar available on the table, so you can add more ginger if you like.
Also, although there is plenty of back fat on top, it does not feel too oily thanks to the ginger.

The “Tokusei shoga shoyu ramen” (Special ginger soy sauce ramen) at “Shoga-shoyu-senmon Gamushara Hatagaya-honten” was a ramen with a perfect balance of ginger and soy sauce.
The soup, noodles, and ingredients were all in perfect harmony.
