Cappuccino ramen｜Rahmen Eddie

“Rahmen Eddie” is a ramen restaurant tucked away a few minutes’ walk from Shinjuku-Gyoenmae Station in Tokyo. Recently, I went there on a weekday evening after discovering the “cappuccino ramen” being talked about on SNS.

The restaurant has a stylish café-like atmosphere with warm lighting on the concrete walls. The clientele includes foreign nationals, couples, and women, giving the restaurant a glamorous atmosphere that is not typical of ramen shops.
After purchasing a meal ticket for “cappuccino ramen” from the ticket machine right outside the entrance and handing it to the staff, you wait at your seat.

The ramen is served in a large mug.
The fluffy meringue makes it hard to see what is inside, but the aroma of porcini and truffles stimulates the appetite.

Under the fluffy meringue…

Gently insert the meringue and what appears is a creamy truffle & porcini cream soup.
While dissolving the meringue in the soup, you eat the flat, medium-thick noodles.
One bite and the mellow aroma of truffles and porcini fills the mouth.
Truffles, porcini, and meringue may sound like pasta ingredients and cooking methods, but they are in fact ramen noodles.

Ingenious yet properly tasty ramen

The creamy broth is entwined with the noodles. The meringue makes it perfect for mixing with the noodles!
The only drawback is that the soup is a little hard to scoop out due to the shape of the mug, but it is so delicious that it doesn’t matter!
The name “cappuccino ramen” and the fact that it is served in a mug are all novel, but the taste is authentic.
It was a new kind of ramen experience that overturned the concept of ramen.
