Soy sauce ramen|Nihombashi Seimen An Nanahasu
I went to eat “Shina soba”(Soy sauce ramen) at “Nihombashi Seimen An Nanahasu”, a ramen restaurant located near Mitsukoshimae Station in Chuo-ku, Tokyo. This restaurant is highly regarded by ramen enthusiasts.
Relaxed atmosphere in a carefully designed restaurant.
Located a few minutes’ walk from Mitsukoshimae Station, “Nihombashi Seimen An Nanahasu” has a Japanese atmosphere from the outside. Upon entering the restaurant, you will find counter seats and small tables, making it easy to visit even if you are alone. Table seating allows you to enjoy your meal at your leisure and creates a relaxed atmosphere. Every time you visit, you can feel comfortable in that quiet space.
Rich flavor of soup made from carefully selected ingredients
“Shina soba” soup at “Nihombashi Seimen An Nanahasu” is made by slowly simmering Hinai-Jidori chicken and carefully selected seafood, and is finished with handmade genuine soy sauce from Akita Prefecture. The soup has a pronounced soy sauce flavor, but the seafood broth is also very effective, and the deep flavor of the soup spreads out with each sip. This light yet rich soup is so delicious that you will want to drink it all the way through.
Homemade noodles and a variety of toppings
The noodles of “Shina soba” (Soy sauce ramen) are homemade thin flat noodles, characterized by their sticky texture. The noodles are a perfect match for the soup, with a moderate chewiness that enhances the flavor of the soup as it mixes with the noodles. Toppings include two pieces each of pork and chicken char siu pork, along with bamboo shoots, greens, nori (seaweed), and ajitama (seasoned eggs), each perfectly balanced in its own way. The char siu pork, in particular, comes in two varieties, one fatty and the other lean, each with its own distinct texture and flavor.
Beautiful looking and delicious ramen
“Shina soba”(Soy sauce ramen) is a beautiful looking dish, and its carefully arranged toppings are a sight to behold. From the large pieces of char siu pork to the crunchy greens and the menma (bamboo shoots) of different thicknesses, you can tell that each and every one has been carefully selected. This ramen gives you a premonition of its deliciousness even before you eat it.
