I went to “Toy box”, a ramen restaurant located in Arakawa-ku, Tokyo, to try their “Shoyu ramen” (Soy sauce ramen). This restaurant has received high praise in numerous media and is a must-visit for ramen lovers.
The restaurant has only L-shaped counter seating, which allows customers to watch the owner cooking their ramen from the time they purchase their meal ticket until the ramen is served.

The first thing to note about the restaurant’s ramen is the soup. The soup at “Toy box” is made from chicken bones and whole chickens, cooked only with water. The combination of this soup with as many as 10 different kinds of soy sauce gives it a complex and elegant flavor. One sip and you will be tempted to keep drinking as the flavor of the chicken and the richness of the soy sauce blend together in perfect harmony. Although there is chicken oil floating on the surface, it is not cloying and is very easy to eat.

The noodles are medium-fine straight noodles made by Taisei Foods. They are slightly softened and are a perfect match with the soup. The broth and chicken oil are thoroughly entwined with the noodles, allowing you to enjoy their deliciousness with every bite. Toppings include shoulder loin char siu pork, roasted pork, bamboo shoots, wontons, and flavored eggs. The shoulder loin char siu is especially large, thick, and very satisfying. The wontons have a less seasoned filling that enhances the flavor of the chicken.

At “Toy box”, the owner carefully crafts each ramen one by one. By adding chicken oil not only on top of the soup but also underneath, you can enjoy the aroma and richness of chicken until the very end. In addition, all the ingredients are of high quality with no corners cut, such as the ajitama (seasoned eggs), which are rich and full of flavor, and the ear-tip menma (bamboo shoots), which are soft and tender.

“Toy box”‘s “Shoyu ramen” (Soy sauce ramen) combines a soup with concentrated chicken flavor, medium-thin straight noodles, and gorgeous toppings.
