I went to eat “Tokusei tori-soba”(Special chicken broth soy sauce ramen) at “Ramen Yamaguchi”, a ramen restaurant located in Nishi-Waseda, Shinjuku-ku, Tokyo. This restaurant seems to be one of the best restaurants that ramen lovers cannot miss. The “Tokusei tori-soba” features a soup with concentrated chicken flavor, exquisite noodles, and gorgeous ingredients.
Amber-colored soup filled with the flavor of chicken
“Tokusei tori-soba” at “Ramen Yamaguchi” first attracts you with its soup. The amber-colored soup, made from Aizu chicken and Rausu kelp, is richly fragrant with chicken oil. One sip and you will be amazed at the elegant flavor of the chicken and the aroma of soy sauce that fills your mouth. Chicken oil floats on the surface of the soup, which keeps the soup hot and gives it richness. Once you taste this perfectly balanced soup, you will surely become addicted to it.
Thin noodles with firm texture and gorgeous ingredients
The noodles are medium-fine and straight. The noodles are slippery and smooth, and intertwine well with the soup. You can enjoy the crunchiness of the noodles until the very end, and you can feel the deliciousness of the soup with every bite. Toppings include two kinds of tender and juicy char siu pork, seasoned eggs, extra-thick bamboo shoots, and a variety of green onions and chicken wontons that are both rich in variety and gorgeous in appearance. The chicken wontons, in particular, had a hint of yuzu (Japanese citron) flavor, and each bite was a new discovery for me.

The ajitama (seasoned eggs) are perfectly cooked and soaked in flavor, and the crunchy texture of the pickled bamboo shoots also adds to the flavor. All of these ingredients come together to create a ramen that can be enjoyed to the end without getting tired of it.
