We visited “Ramen Break Beats”, a ramen restaurant located in Yutenji, Tokyo, and tasted their “Tokujo shoyu ramen” (Special soy sauce ramen). This restaurant is completely reservation-only, with 4 to 5 slots available every 15 minutes, so you can smoothly enter the restaurant without standing in line. The interior of the restaurant is stylish, clean, and has a relaxed atmosphere.

I ordered the “Tokujo shoyu ramen” (Special soy sauce ramen). The soup is made from soup stock based on “Amakusa Daioh,” a famous local chicken, and kombu (kelp). The sweetness of the chicken and the flavor of the kelp are in perfect harmony. The chicken oil seems to be extracted not from the soup but from the fat of the slow-heated Amakusa Daioh, giving it a rich aroma.
Superb taste
Ramen Break Beats’s “Tokujo shoyu ramen” (Special soy sauce ramen) looks like a work of art. A sip of the soup will fill your mouth with the delicious flavors of chicken and kelp, giving it a deep, rich taste. The noodles are thin, medium-added water noodles, and while straight, they have a sticky texture. The “Tokujo shoyu ramen” (Special soy sauce ramen) is topped with several kinds of low-temperature-cooked pork char siu, each with a different flavor and texture. In particular, the duck loin and chicken breast char siu are tender and their smoked aroma matches perfectly with the soup. Toppings such as fried enoki mushrooms and kujo leeks also enhance the overall balance of the ramen.
The wontons are flavored with ginger and yuzu and have a refreshing taste that makes them very easy to eat. The low-temperature cooked chicken char siu pork is tender and has just the right amount of smokiness that enhances the flavor of the broth without interfering with it. The smoked pork shoulder roast char siu is also excellent.
