Special Ramen|Chuka soba Shibata

I usually do not have a chance to visit Sengawa, but I took the train to Sengawa to try the ramen at “Chuka soba Shibata”. As expected, there were many people waiting in line. You have to be prepared to wait in line to visit this restaurant.

After entering the restaurant, I immediately purchased a meal ticket for the special ramen from the ticket machine, and after being seated, I did not have to wait long before my ramen was served. The smooth operation is a nice feature.
The soup is a beautiful color with a thin film of chicken oil. There are so many ingredients on top that it hides the noodles, and it looks delicious from the outside. First, take a sip of the soup. The chicken and seafood base is combined with refined soy sauce and chicken oil, making it very mild and tasty, and the rich chicken flavor fills the mouth. The ultra-thin, straight noodles are light yet well mixed with the soup and have a smooth texture.

“Special Ramen” are filled with three kinds of char siu pork (loin, thigh, and belly), a generous portion of throat-ripened wontons, ajitama (seasoned egg), menma (pickled bamboo shoots), and green onions. The smoky peach char siu is especially excellent, and its large size is very satisfying. The ajitama is also perfectly semi-cooked, giving it a rich flavor.

All the ramen dishes at “Chuka soba Shibata” were of high quality and well balanced. The soup, noodles, and toppings were in perfect harmony, making the ramen highly satisfying. The overall volume of the dish was also sufficient, which probably contributed to the high level of satisfaction.
