Original dipping noodle|Taishoken Nakano
This time, we visited “Taishoken Nakano”, the originator of dipping noodle (tsuke soba), located in Nakano Ward, Tokyo.
It is a few minutes’ walk from the south exit of Nakano Station. The ramen restaurant is located on a corner and is very easy to find.
Perhaps because it was a little late in the day when I visited, I entered the restaurant smoothly without waiting.
Enjoy the “Ganso Tsuke-soba”(Original dipping noodle)
Looking at the ticket machine, the menu is relatively extensive, including the popular “Genso Tsuke-soba”(Original dipping noodle)as well as other versions such as the “Kotteri” (rich) version.
This time, however, I ordered the popular “Ganso Tsuke-soba”(Original dipping noodle)without hesitation.
The soup is animal-based and made with chintan soup (chintan soup is a clear soup that is not muddy. The soup is made by simmering the ingredients while keeping the temperature inside a small bowl at about 80° to produce a clear, uncloudy soup) with a hint of soy sauce and sourness. There is no sweetness, and the spiciness is only slightly affected by the one chili pepper floating in the soup. The soup is not greasy and has a strong sourness, giving it a refreshing feeling that only ramen can provide.
Next, we have the noodles.
The noodles are thick and straight, with a firm texture, which is one of the main characteristics of the “Original dipping noodle”.
The noodles have sufficient presence and are very satisfying to eat.
The toppings are simple: char siu pork, bamboo shoots, seaweed, and green onions. This is a clean and appetizing dish.
The char siu pork is chopped into easy-to-eat pieces, which allows the noodles and soup to mix well, and tasting them together enhances the unique taste of tsuke-soba.
The sourness of the dipping sauce makes the sweetness of the fat from the char siu pork stand out even more.
