Ama-Rock(Light soy sauce ramen)|Rock’n’billy-Super1
“Rock’n’billy-Super1” is an extremely popular ramen restaurant in the Kansai area (Osaka, Kyoto, Hyogo, Nara, Wakayama, and Shiga prefectures), with lines forming every day.
Located in a residential area about an 8-minute walk from Tsukaguchi Station in Hyogo Prefecture, the restaurant’s rules include no photography in the kitchen and no loud conversations.
“Rock’n’billy-Super1” has been ranked No. 1 in Japan’s famous Ramen Walker for six consecutive years and has been inducted into the Hall of Fame.
The owner of the restaurant is the same person who used to run the famous “69’N’ROLL ONE” restaurant near Machida Station in Tokyo, and is the creator of many specialty restaurants that have sprung up in recent years.
Legendary owners and special ramen
“Rock’n’billy-Super1” opened at 11:00 am. This time, when I arrived a little after 11:00 a.m., about six people were already waiting.
At Rock’n’billy-Super1, there are no meal tickets; you order orally and pay later.
The restaurant has a uniquely tense atmosphere with only minimal background music and the sound of a ventilation fan.
The owner’s unique style of making ramen is as distinctive as ever and is a sight to behold. The owner’s unique style of draining the water from the noodles is also very cool.
This time, I ordered “Ama Rock” (light soy sauce ramen) and “Ajitama” (seasoned egg), which are the signature items on the menu.
Soup and noodles with excellent compatibility
As usual, we start with the soup.
The soup has the deep flavor of chicken, and the golden chicken oil adds richness. The soy sauce, which is a blend of several kinds of soy sauce, gives the soup an exquisite flavor that spreads in your mouth. You can also taste a hint of Japanese soup stock.
The noodles are medium thin, hard-boiled and chewy, and blend well with the soup.
The topping of ajitama (seasoned eggs) is of high quality, and the pork char siu pork is lightly peppered, thinly sliced, juicy, and delicious. I was so engrossed in eating that I naturally ended up finishing the soup.

The owner of “Rock’n’billy-Super1” puts his heart and soul into each bowl of ramen, and it is worth it just to see the legendary owner still standing in the kitchen making ramen. It is worth it just to see the legendary owner still standing in the kitchen making ramen.
