Special salt ramen|Rahmen Eddie
I had been curious about “Rahmen Eddie” for some time.
I had seen pictures of the restaurant, and both the interior and the ramen had a very stylish and sensitive impression, so I was curious about it, When I entered the restaurant, I thought, “This looks like a nice store,” and chose a menu item from the ticket machine at the entrance. Rahmen Eddie generally recommends “Shio ramen” (salt ramen), so I ordered “Tokusei shio ramen” (special salt ramen).
“Rahmen Eddie” takes great care in creating each bowl of ramen, making the most of local ingredients. The soup is made from fresh chicken and aromatic konbu broth (kelp stock), which go well together, and is delicately adjusted with French rock salt. The surprisingly clear flavor is completely free of any salt bitterness or half-boredom. The depth of flavor is unique among the “Shio ramen” (salt ramen) I have experienced so far.
Rahmen Eddie uses noodles supplied by Sugano Noodle Mills, which has a 70-year tradition of making noodles, and you can choose from thick, medium, or thin noodles. This is the ultimate in customization, allowing you to enjoy a cup of noodles just the way you like it. Thin noodles, in particular, usually stretch over time, but at this restaurant, for some reason, they do not stretch until the very end, allowing you to enjoy the vivid presence of the noodles. This surprising cooking method is just like magic.
To ensure that you can continue eating without getting bored, the restaurant also offers oils such as lemon ginger oil and ethnic pak choi oil so that you can change the flavor of your ramen while you are eating it. These seasonings also show the owner’s attention to detail.
The toppings, such as boiled eggs and char siu pork, are also exceptional. The harmony of the perfectly salted boiled egg and the three kinds of char siu pork is exquisite.
And don’t miss the rice balls with the yolk of the egg on top. At Rahmen Eddie, the rice ball are just as famous as the ramen. They are equally salty, and the flavor lasts until the very last bite. They are also great when paired with ramen.
Both ramen and rice ball are very satisfying. You will definitely want to visit for its supreme taste.
