Vege soba|SORANOIRO ARTISAN NOODLES|Ramen
SORANOIRO ARTISAN NOODLES in Kojimachi, Tokyo, is a ramen restaurant that has been making various efforts for a long time. The “Sanma ramen” (Pacific saury broth ramen) I had on a previous visit had an unforgettable impact on me. I think they were working on developing vegan ramen products earlier than other ramen stores.
I love “Shouyu ramen” (Soy sauce ramen) and “char siu ramen,” the base of “SORANOIRO ARTISAN NOODLES,” which faces ramen head-on and never stops working hard.
This time I went a little later in the day, after lunch, so there was no line and I was able to smoothly enter the restaurant.
I decided to try “Vege soba” (Vegetable ramen) for the first time in a while. I am not a vegetarian, but this “Vege soba” is just delicious.
It is an attractive combination of a bright vegetable-based soup and noodles mixed with vegetables.
First of all, the bright colors are eye-catching.
The noodles are kneaded with a wide variety of vegetables, and their unique flavor and chewiness are almost addictive.
The color is said to be mainly the color of paprika.
The soup is like a thick potage.
It is based on carrots, onions, and tomatoes, with a delicate broth made from konbu (kelp) and mushrooms.
The restaurant also has a vegan menu, and there is an atmosphere that allows even a single woman to stop by. The restaurant is also stylish.
In fact, the concept of the restaurant is “a ramen store where women can casually enjoy themselves alone.
Enjoying “vege soba” and the potage-like soup with soothing healing music in the background will purify your mind and body.
“Vege soba” may be a new genre of food, derived from ramen.
