“Niboshi chukasoba SUZURAN” (dried sardine ramen SUZURAN) has a clean image and polite customer service. Located close to Shinjuku Sanchome station, it is a place you will always remember when you want to eat “Niboshi ramen” (dried sardine ramen). As the name suggests, this ramen restaurant is, of course, strongly focused on “Niboshi” (dried sardine).
The picture makes you think, “Is it a dried sardine ramen soup with a thick and thick taste?” But this is not the case. Of course, the broth with a thick and thick taste is delicious, but the “Niboshi ramen” (Dried sardine ramen) at “SUZURAN” has a very strange sense of balance, with a strong taste of dried sardines but a clean and refreshing taste.
You buy your order ticket from the ticket machine on the left as soon as you enter the restaurant, hand it to the staff over the counter and wait for your ramen to be ready. You don’t have to wait long and your ramen arrives within a few minutes.
To start with, you are served with the restaurant’s signature soup. There is almost no bitterness from the dried fish, and the soup is in perfect harmony with the animal-based flavour, with the dried fish being the star of the show. It is very tasty.
Next, medium-thick, frizzled noodles are used. They also look delicious. They have a slippery texture, a firmer bite and a good flour taste.
After the noodles is the thinly cut rare char siu pork. Indeed, it is best to avoid large pieces of char siu pork to match with the dried dried fish. The appearance of the rare char siu is appetising. Put a piece in your mouth and bite into it, and you will enjoy the elegant flavour of the char siu.
When you break open the ajitama (seasoned egg) , the reddish yolk overflows in a jelly-like state. The rich flavour of the yolk is perfectly matched with the flavour of the dried sardines. The plump texture of the white meat also accentuates the taste.
The menma (seasoned bamboo shoots) is cut into large pieces and has a concentrated flavour. Despite their large size, the menma are soft and the final sensation of crunchiness and fibre is exquisite. It is infused with flavour and is extremely tasty.
The soup, noodles and toppings are a harmonious gem. We enjoyed it deliciously. Thank you for the feast. Thank you.
