Ayu goto ramen|Ayu ramen

When I first saw the picture before, I thought, “What the heck is this ramen?” and I’ve always wanted to visit “AYU RAMEN”. There is a branch in Toranomon Yokocho in Tokyo and I went there with a friend.
The ramen we ordered was “Ayu goto ramen”. After placing our order, the delicious looking ramen arrived in less than five minutes.

Look at that bowl of ramen and you can’t help but smile… In the clear, clean broth, you will see a sweetfish that looks like it is swimming. It is otherwise topped with spring onions and seaweed. The large bones of the ayu fish have been carefully removed.

When you first take a sip of the soup, its unique flavour spreads in your mouth. It is beyond imagination that a soup made with ayu fish, a freshwater fish, could taste so good. Saltwater fish have their own unique flavours, but the flavour of the broth made from freshwater fish is unparalleled. This high-quality ayu fish takes the quality of its salted ramen to the next level.
The ayu fish is well browned and its flesh is full of flavour. The ayu fish is dried overnight and you can’t help but feel its luxury. The large bones have been removed so that the fish can be enjoyed from head to end. This is undoubtedly the result of a lot of time and effort.

The thin, shriveled noodles have a high water content and are slightly hard boiled to a chewy consistency. These noodles will pleasantly surprise you with their perfect balance as you eat them with the soup and with the sweetfish. These noodles are not just a side kick, they are the star of the show with the soup. When you eat it while mixing in the ayu fish along the way, you will be pleasantly surprised by the exquisite balance of the noodles. The deliciousness of the dish drew me in and the noodles were gone in no time.

Every single bowl of food here shows the skill and passion of the chefs and their commitment to high-quality ingredients. Each dish conveys the individuality and humour of the restaurant, which features ayu fish, and provides customers with a special experience through their meal.
