Thick fish and pork ramen|Noukou ramen Kanaya
“Noukou ramen Kanaya” is located a few minutes’ walk from Tokyo’s Hounancho station. I visited to try the ramen made by the owner, who has a deep love for ramen.
Enter the restaurant and buy a meal ticket for a bowl of “Thick fish and pork ramen”, a bowl of which you had already set your sights on. Hand the ticket to the waiter.
You can choose between thick or thin noodles.
The restaurant has a simple counter-style interior. There is also a waiting area.
After a few minutes’ wait, a gorgeous bowl of soup appears in front of you. The soup is thick and beige. On top of that, there is a magnificent topping of char siu pork, flavoured eggs, kikurage mushrooms, spring onions and nori seaweed. The rare char siu pork in particular is so large that it overflows the bowl! It is already very satisfying from the outside and fills your heart with anticipation.
The first mouthful of soup is a creamy soup with a soft, sweet taste. It is not cloying, but exquisitely balanced, and you can feel the power of the pork bones that have been thoroughly boiled to achieve this flavour, while also being salty. There is no smell and the creaminess of the soup is appetising. The soup is named “fish” in the name of the ramen, so you can also smell the seafood in this deep broth.
The noodles are thick and well mixed with the soup. The chewy texture of the noodles sets them apart from ordinary thin pork ramen noodles.
The abundant ingredients, such as large pieces of char siu pork, bamboo shoots, spring onions, seaweed and naruto, provide the perfect balance for the ‘thick fish and pork ramen’.
I was so enthralled by the deliciousness of the bowl that I even finished the soup. It was a very quick and happy time.
