Grilled pork tripe dipping noodle|Ramen Tatsunoya

“Ramen Tatsunoya” is located along Kotakibashi-dori(Kotakibashi street), a little north of Shinjuku Station in Tokyo. The main shop is in Kurume City, Fukuoka Prefecture, and serves tonkotsu (pork bone) ramen, but the Motsu tsukemen(Grilled pork tripe dipping noodle)here is superb. The first time I had it, it was so good I went back two days in a row.

There is always a long queue at this restaurant, but there are plenty of seats inside and several staff members, so you can often get in early, despite the number of people queuing.

My order is always the Motsu tsukemen(Grilled pork tripe dipping noodle). I have had ramen once, which is of course delicious, but the ‘motsu tsukemen’ is so good that I always end up ordering the same thing.
Because it is tsukemen, it seems to take a little longer to be served, but it still takes less than 10 minutes. I appreciate the efforts of the staff.

When the tsukemen arrives, it has a characteristic black tsukemen soup. In it is a lot of seared motsu. The inclusion of motsu in the soup is not surprising, as it is a ‘motsu tsukemen’, but the appearance is still intriguing.

The noodles are thicker than ramen noodles, but a little thinner and straighter for ‘tsukemen’(dipping noodle). These straight noodles carry the outstandingly tasty ‘tsukemen’ and the ‘motsu’(tripe)inside. The taste of the ‘motsu’ ‘dipping soup’ really sets it apart from seafood-based tsukemen and other tsukemen. It has the best flavour of the “motsu”(tripe)which is also seared.
Of course, the toppings such as the boiled egg and the char siu pork are delicious, but the star of the show is the motsu tsuke soup. It is the best.
It’s so good that you finish the noodles in no time at all.

However, there is still some fun to be had after the noodles are finished.
You can hand over the leftover “dipping soup” to the staff. The staff will reheat the dipping soup in a few minutes and add congee rice to it.
The “tsukemen” alone is great, and then you get porridge to go with it.

To be able to have congee with this “dipping soup” of motsu is truly a perfect way to enjoy a bowl of congee.
I was full because I had tsukemen and congee, but the restaurant filled me with a feeling of satisfaction even more than that.
