“Niboshi-Soba Koshin” is located about a 10-minute walk south of Nakano-Shinbashi Station in Tokyo. The restaurant is not that spacious and has only a few seats, and it is a short walk from the station, but the “niboshi ramen”(dried sardine ramen)served here is excellent.

The restaurant also offers limited edition ramen, making it a valuable ramen shop that you will never get tired of visiting.

I order the “Ajitama Niboshi Soba”(Seasoned egg & Dried sardine ramen)recommended by the restaurant.

The first thing you notice is the color of the soup. In contrast to the dark hue of most niboshi ramen(dried sardine ramen), it is so clear that it reminds one of salt ramen. One sip reveals its true value. The soup has a clear, refreshing taste, but you can still taste the robust flavor of niboshi (dried sardines). The taste of the soup is truly a new aspect of deliciousness.

The thin noodles that go well with the soup enhance the flavor that spreads in the mouth as the noodles and soup become one. The smooth texture makes you happy all the time as the deliciousness flows into your mouth. I finished it so easily that I later regretted that I should have ordered rice.

Also not to be forgotten as a topping is the thick menma (pickled bamboo shoots). Their texture and unique flavor enhance the balance of the bowl. And the ajitama(seasoned egg)has a flavor that competes with the soup with its presence. Its yolk is soaked with flavor, and we strongly recommend that you choose the Ajitama Ramen(Seasoned egg ramen) because of its deliciousness.

The Ajitama Niboshi Soba(Seasoned egg & Dried sardine ramen) is a ramen with an unexpectedly delicious flavor. Its clear broth, thin noodles, thick bamboo shoots and ajitama(seasoned egg) toppings are in perfect harmony. The taste and satisfaction of this dish is definitely one that we can recommend.

The restaurant sometimes offers a limited edition of slow-cooked chicken broth ramen (tori-Paitan ramen), which is also very tasty.
