Special soy sauce ramen|Chukasoba Katsumoto
“Chukasoba Katsumoto” is a ramen restaurant in Kanda, Tokyo, where there is always a queue.
I had some errands to run in the neighbourhood, so I finished my errands and went there.
The queue was still short, and the restaurant was managed to make entry as smooth as possible, so I was able to wait without stress.
First, when we entered the restaurant, a ticket machine was placed near the entrance and we selected “Tokusei Chukasoba” (Special soy sauce ramen).
Following the waiter’s guidance, we were seated at the counter, where the restaurant is spacious and has a pleasant sense of openness.
After a few minutes of waiting, the ramen we ordered was served.
The clear, soy-sauce-based soup poured out of the bowl in spills, and the ramen was highlighted by a wide variety of toppings, including seaweed, seasoned egg and char siu pork.
The first sip of the soup reveals the rich flavour of niboshi broth. The flavour of the dried sardines can be felt and the soup is light and refreshing. The soup is impressive for its lack of cloying taste and deep flavour.
The noodles are straight, medium-fine noodles with a good texture and intertwine perfectly with the soup.
The char siu pork also has a good balance of fat and lean, tender and tasty. As a surprise discovery, the seasoned bamboo shoots are also exquisitely seasoned and textured, while the richness of the boiled egg and the flavour of the nori (seaweed) are also very appetising.
The noodles, soup and toppings all work together to maximise the flavour of the ramen. The enthusiasm with which the ramen was made with time and care could certainly be felt from the ramen.
The visit was a memorable ramen experience.
