Grilled flying fish salt ramen|Yaki-ago shio ramen Takahashi

“Yaki-ago shio ramen” (grilled flying fish salt ramen) is a slightly different type of ramen. Yaki-ago shio ramen Takahashi is located in Shinjuku, Tokyo, and serves delicious ramen even late at night.

We entered the restaurant after purchasing a ticket for the ramen we ordered from the ticket machine outside the store.

The soup is a blend of pork and chicken bones, grilled flying fish, niboshi (dried sardine), and kombu (kelp).
The broth from the grilled flying fish is carefully extracted at three different temperature settings, and the resulting thick broth is combined with a salt sauce made with natural salt imported from Okinawa Prefecture. The noodles to go with this delicious soup are hand-kneaded flat noodles. These noodles are also chewy and delicious, making them a perfect match.

The toppings of rare char siu pork and chicken char siu pork are also delicious, and one can sense the strong commitment to the flavor of each and every ingredient.

I really appreciate the fact that they serve highly satisfying ramen until late at night.
