I went to eat the highly reputed “Toripaitan ramen”(Slow-cooked chicken broth ramen) at the ramen restaurant “Men Hikyu Rokkomichi-ten” in Rokko-michi, Nada-ku, Kobe City. The restaurant was crowded with many ramen lovers and I realized how popular it is.

The most distinctive feature of the “Toripaitan ramen” at “Men Hikyu Rokkomichi-ten” is the espumaed slow-cooked chicken broth soup. The soup, which conveys its richness from its appearance, has a deep and robust flavor, as if the chicken flavor has been concentrated. Also known as a foamy soup, it has a sloppy texture but is less greasy, and the sweetness of the vegetables is well balanced. Another appealing feature is the aftertaste, which disappears quickly without leaving a lumpy feeling in the mouth. In particular, the sweetness of the broth is drawn out well from the chicken, and its mildness spreads in the mouth. It is also recommended to add vinegar in the latter half of the dish to change the taste.

Intertwined with slow-cooked chicken broth soup are homemade noodles with a sticky texture. The medium-thick, flattened style noodles have a strong wheat flavor and are a perfect match for the soup. Whole wheat flour is used for the noodles, and the taste of wheat spreads in the mouth with each bite, intertwining perfectly with the soup. The homemade noodles absorb the broth well and are smooth to the touch, and the smooth texture is irresistible.

There are two types of toppings: chicken char siu and char siu pork, each of which matches perfectly with the soup and noodles. The chicken char siu is characterized by its moist texture, while the char siu pork offers a robust meaty flavor. In addition, the semi-cooked ajitama (seasoned eggs) are well seasoned, and the bamboo shoots, green onions, and nori (seaweed) further enhance the flavor of the ramen.

“Toripaitan ramen” at “Men Hikyu Rokkomichi-ten” is a high-level ramen with a rich broth and homemade noodles. The toppings of the ingredients also bring out their individuality, so you will never get tired of the ramen until the very end. If you enjoy ramen in Nada Ward, Kobe, be sure to visit “Men Hikyu Rokkomichi-ten”.
