Char siu pork ramen with garlic|Toku-men Kotsu-icchou ramen
This ramen restaurant is like a fusion of “Jiro-kei” and “Seabura ramen” (back fat ramen).

I ordered the “char siu pork ramen”. Of course, I order it with garlic.

First, taste the soup. The soup was surprisingly elegant without being cloying.
The pork bone soy sauce “tonkotsu shoyu” (tonkotsu soy sauce) is sharp and not too salty, giving it a refined aftertaste.
The “back fat” covers the surface of the soup, but the oil is not too greasy and enhances the flavor.
The noodles with kinked edges are medium-thick and slightly firm. These noodles are a unique feature of this restaurant and seem to be a must for ramen lovers.
The noodles are more resilient and stronger than they appear, and have a presence that is not overshadowed by the rich broth.
The char siu pork features a little more fatty meat than lean. The pork shoulder roast “char siu pork” is boiled very well, and while it is tender, it still has a firm texture and is very satisfying to eat.
