Light soy sauce ramen｜Soranoiro

Tokyo Ramen Street in Tokyo Station. Among the many famous ramen stores, we went to “Soranoiro,” a store that draws a long line.
Of course, the main store is also delicious, but we would like to introduce this store near Tokyo Station.

The main store is an interesting ramen store that has appeared in a famous manga and has collaborated with other stores.

The ramen featured here is the “Light soy sauce ramen”. They also have a vegan ramen menu, which seems to show their insatiable challenge for ramen.

The ramen arrived shortly after I ordered the “light soy sauce ramen,” and the clear soy sauce broth was eye-catching. The soup is like a jewel, decorated with medium-thin noodles, chashu pork, pickled bamboo shoots, and chopped green onions.

One sip of the soup and you will be overwhelmed by its delicious flavor. The flavor of soy sauce is just the right strength, and the chicken flavor spreads out and fills your mouth with its aroma. The deliciousness is like a concert, a harmony of various umami flavors. The subtle echoes of the pork and kelp flavors are truly miraculous.

When you bring the noodles to your mouth, the elasticity and wheat flavor of the thin noodles in multi-padded water make them dance on your tongue. The moment the soup and chicken oil become one with the noodles, and the sweetness of the wheat and the richness of the chicken oil come together, it is truly an art of deep flavor.

And then there is the Char siu pork. Thinly sliced pork thigh and thickly sliced low-temperature-cooked chicken breast. The pork thigh has a smoky aroma, and its lean flavor spreads in the mouth with each bite. The chicken breast, on the other hand, has a moist and light flavor that is maintained by moderate cooking, and the salty and sweet tastes are exquisitely intertwined with each other to create a richly flavored bite.

After finishing the ramen, there is only one thought: this ramen is a masterpiece, a perfect fusion of the depth of the chicken broth and the sharpness of the freshly fried soy sauce. It is a bowl of ramen that we hope you will enjoy as well.
