Tansei ramen|Menya Tsumugu
We went to the extremely long line at “Menya Tsumugu”, located in Unobe, Ibaraki City, Osaka, Japan.
This ramen restaurant is only open for lunch on weekdays (Monday, Tuesday, Thursday, and Friday). We had heard that there were many people waiting in line, so we arrived a little after 9:30 a.m., although the restaurant opens at 11:00 a.m. We were the second in line, with one customer already waiting. We waited for the opening time and entered the restaurant.
Two types of special ramen
While most ramen restaurants use the ordering method of purchasing a ticket for the ramen to be ordered from a ticket vending machine upon entering the restaurant, “Menya Tsumugu” uses the system of verbally ordering ramen in order after entering the restaurant. The menu is very straightforward and inexpensive, with two types of ramen: Jukusei Ramen (Hakuto) and Tansei Ramen (Chintan).
Jukusei Ramen (Hakuto): A very thick soup with a rich seafood chicken hakuto soy sauce flavor and homemade medium-thick noodles makes a big impact.
Tansei Ramen (Chintan): Light seafood chicken soy sauce flavor with homemade medium-thick noodles in a very light broth that is hard to get out of your head.
The soup is at the extremes of rich and light, so you can choose your ramen according to your preference.
This time, I ordered the “Tansei Ramen”. After a short wait, the long-awaited ramen arrives.
The soup is based on a mild chicken soup with vegetables and seafood. The soup has a gentle flavor with a strong core. The delicate and deep flavor is the owner’s specialty.
The noodles are thin, straight, and supple. The noodles have a presence as if they are nestled in the soup, with a supple firmness and a rich wheat flavor.
The soup and noodles combine to create a special cup of ramen. The carefully crafted ramen and the attentive customer service go without saying.
The ingredients are roasted pork belly, white onion, pickled bamboo shoots, naruto, and nori (seaweed). There is one large, thin piece of seared char siu pork with a nice savory flavor that is very, very tasty.
It was great to be able to have this ramen of this restaurant without waiting in line.
