Superior ramen|Gokujo chuka-soba Fukumi
Located on the first basement floor of KITTE, a commercial facility directly connected to Tokyo Station. We enjoyed “Gokujo chuka-soba” (Superior ramen) at “Gokujo chuka-soba Fukumi”, which boasts an outstanding reputation even in the fierce battle zone of ramen.
Royal style shines through in its refined simplicity
The restaurant has a relaxed atmosphere, with counter and table seating available. Because it was late in the evening, the restaurant was relatively empty and the ramen was brought out immediately.
The clear golden broth with beautifully arranged noodles and ingredients. The visual of the noodle was very appetizing.
It was a Saturday night, but we entered the restaurant smoothly without waiting in line. I purchased a meal ticket from the ticket vending machine right outside the entrance, and my heart was filled with anticipation.
The brand name chicken broth, Japanese pork chashu pork, and low-pasteurized noodles are a perfect match!
The soup is a clear broth made from brand-name chicken, “Shingen-MaruDori”.
One sip and the chicken flavor will spread out, giving the soup a light yet deep taste.
The Japanese pork char siu pork is moist, tender, and full of flavor.
The low-pasteurized, medium-fine, straight noodles are perfectly blended with the soup, and the smoothness of the noodles is irresistible.

It is true to its name, “Gokujo chuka-soba” (Superior ramen). I am not sure if it is or not, but it is very tasty and I feel like I have tasted the royal road of Chinese Soba. It was a refined bowl of noodles. I think it was the very best Chinese noodle, a dish that did not try to be eccentric, but brought out the best of the ingredients.
