Seasoned egg soy sauce ramen|Menya Shichisai
This time we visited the famous restaurant “Menya Shichisai” in Hatchobori, Chuo-ku, Tokyo. Located about a 3-minute walk from Hatchobori Station, the restaurant is very easy to find as it faces Yaesu Street, and you can easily identify the sign.
At the entrance, there is a base menu and a limited menu, all of which have English explanations, making it easy for those who do not understand Japanese to understand and decide on the ramen of their choice while waiting.
In cooperation with a variety of producers, “Menya Shichisai” sometimes creates innovative menu items that are not available at other restaurants.
At the entrance, there is a board with the owner’s thoughts written on it, so you can learn before you eat your ramen that this is a kind-hearted restaurant that values simple ramen that makes the most of the flavor of the ingredients and the thoughts of the producers.

A ticket vending machine is set up as soon as you enter the restaurant. Including limited edition ramen, there are quite a few items on the menu, and the amount of noodles can be selected from 150g, 200g, and 250g for free.
This time, I ordered “Ajitama ramen shoyu”(Seasoned egg soy sauce ramen).
At “Menya Shichisai”, the way you enjoy your ramen depends on where you sit.
The restaurant has only a counter with a total of 11 seats, but if you sit on the left half of the counter, you can watch the professional ramen making process, and if you sit on the right half of the counter, you can watch the noodle making process.
Only pepper and black pepper are placed on the counter as condiments. Both are exquisite peppers that go well with ramen.
After a few minutes of waiting and watching the professional process of making the ramen, my order of “Ajitama ramen shoyu”(Seasoned egg soy sauce ramen)was brought to me. The toppings are simple: Ajitama (seasoned egg), char siu pork, shredded bamboo shoots, and green onions.
The soup is a dark-colored soy sauce broth with a combination of animal and seafood broths and just the right amount of sharpness from the soy sauce.
The deep taste and flavor are fully apparent even in the first sip. And for some reason, the flavor seems to increase every time you eat it. The more you drink the soup, the more delicious it tastes.
The flavor is simple and easy to understand, and this exquisite umami is truly too good to be true.
The noodles are freshly boiled on a homemade surface. The noodles are hand-pulled flat and are quite weak and soft. Nevertheless, they are very tasty with the soup without any discomfort. The cross-section of the noodle is not flat, and that is why the soup seems to be well entangled with the noodle.
The toppings are pork belly and pork thigh. Both have excellent chewiness and flavor, and the special version, which increases the volume, is also very satisfying.
