Soy sauce ramen|Junteuchi Daruma

“Junteuchi Daruma” is located near Nakanofujimicho station. This restaurant is only open during lunch time, so it may be difficult to find a good time to visit, but if you decide to have lunch nearby, I highly recommend that you stop by.

The “pure handmade noodles” are of course their specialty, but it is not just the noodles that are delicious, but the soup as well. This ramen restaurant offers high quality ramen in all aspects, including soup, noodles, and balance.

There were already more than 15 ramen lovers lined up in line, eagerly waiting for the restaurant even before it opened. The popularity of the ramen restaurant raised my expectations, so I joined the line and stepped into the restaurant, which was filled with the aroma of ramen.

First, I purchased a ticket for “Shoyu ramen” (Soy sauce ramen) from the ticket machine. Before handing over the ticket, I was asked how much noodles I wanted, so I chose “large” without hesitation.

Inside the restaurant, seven people were seated at the counter, and about 10 more were waiting in the waiting area. The restaurant was so popular that even the waiting list was not enough, and many people were lined up outside.

Each ramen dish is prepared with such delicate handiwork that it is worth it just to witness it. First, the noodles are carefully cut and acclimated before being put into a large pot of boiling water. The owner’s deft hands then proceeded to quickly cook and serve the ramen.

After about 10 minutes of waiting, the long-awaited ramen was served in front of me. As I took a sip of the soup, my mouth was filled with the richness of the sweet soy sauce broth. And what can’t be overlooked here are the homemade noodles. The flattened noodles were slightly soft after boiling, and their softness was a characteristic of homemade noodles.

The soup had a perfect balance of dashi and tare (sauce), and I was surprised at how much depth could be achieved with no chemical seasoning. The thinly sliced pork belly and duck meat char-siu was a delicate harmony of tenderness and meaty flavor, which combined with the ramen broth created a melt-in-your-mouth flavor. The spinach and green onion toppings added an extra flavor and eye-catching color to the ramen.

The char siu gohan(char siu bowl), on the other hand, was a small bowl of rice with a superb portion of chopped char siu pork soaked in a light sauce. The large serving of char-siu pork was extremely tasty, with the flavor of the meat entwined in the sauce.

Some may find the noodles soft, but their softness is a characteristic of this ramen, and the harmony of the whole creates its unique flavor. Once you experience the taste, you will surely vow to return. It is well worth the trip for the unparalleled taste.
