The ramen is what you are interested in.
I have never seen or heard of “Cow tongue” and “Japanese yam” ramen anywhere else, so my curiosity was piqued.
I ordered “Gyuutan tororo ramen” (Cow tongue yam ramen).
After a short wait, the ramen appeared with the “Japanese yam” covering the top of the broth.
The soup, based on chicken stock and dried sardines, is characterized by its thickening.
Bamboo charcoal oil baked in an earthen kiln is added to deepen the flavor.
The noodles, made with whole wheat flour, are chunky and go well with the soup.
Instead of char siu pork, there are two pieces of cow tongue. The tenderness and flavor of the meat is exceptional.
