Kagawa Prefecture is the home of udon, Japan’s most famous noodle.
Despite being the smallest prefecture in Japan, Kagawa Prefecture has by far the largest number of “soba/udon restaurants” per 10,000 people in Japan.
Among the countless number of udon restaurants in Kagawa Prefecture, we would like to introduce “Sanuki Ramen Hamando,” whose owner is the winner of the “First Sanuki Udon King Championship” held in 1998.
Eating 1,500 meals a year
The owner of “Hamando” spent three years eating 1,500 servings of udon noodles a year in order to create delicious ramen, searching for tips on how to make delicious Chinese noodles. The outstanding sense of taste of the ramen at “Hamando” today is the result of the owner’s persistent research activities.
He continued his research through trial and error to reach his current ramen taste, and in 1999, he opened “Sanuki Ramen Hamando”, which has become a nationally recognized ramen restaurant.
An astounding and overwhelming number of menu items
Like most ramen restaurants, at “Hamando” you purchase a meal ticket.
What sets Hamando apart from other ramen stores, however, is the large number of items on the menu. The ticket machine is lined with detailed buttons, all of which are meal ticket buttons for various ramen, toppings, etc.
You will surely have a hard time deciding on a menu. If possible, it might be a good idea to decide on your favorite ramen in advance.
Ramen, Dipping noodles, Mixsoba, and all kinds of ramen are available, so you will never get tired of the variety of menu items no matter how many times you visit.
Seasonal ramen, cold ramen in the summer, and a limited menu for the year-end and New Year’s holidays also seem to be excellent, and my common sense that I usually only go to ramen restaurants in the city center is shattered by “Hamando”. I am impressed even if I only look at the menu on the ticket vending machine.

Being able to come to Hamando, which is not easy to visit, I ordered “Hamando Ramen,” which was recommended by the owner.
We were seated at the table guided by the staff, and after a short wait, the ramen was soon brought before us.
I immediately started with the soup.
The soup is a blend of soup stock made from small dried fish caught in the Seto Inland Sea, which Kagawa Prefecture faces, and soup stock made from chicken and pork from Kagawa Prefecture. The soup is beautiful in appearance, golden in color and beautifully clear.
The noodles are flat noodles that the owner has researched and made. The taste of wheat comes out clearly, and the noodles are a perfect match for the soup, giving it an elegant flavor with an exquisite texture.
The topping was a large piece of char siu pork, moist, chewy, soft, and very tasty, and the seasoned egg was half an egg, with a slightly savory flavor and a firm yolk.
