Backfat soy sauce ramen|Chuka-soba Kibi
I visited “Chuka-Soba Kibi” located in the neighborhood of Meidaimae Station in Tokyo. I had heard good things about the restaurant in the past, so my expectations were high before visiting. When we arrived, there was a small line in front of the restaurant, but we were able to enter after waiting about 10 minutes.
Ramen noodles with back fat but with a light feeling
After entering the restaurant, I bought a meal ticket from the ticket vending machine. I ordered the “Seabura chuka-soba” (Backfat soy sauce ramen). Not long after ordering, the long-awaited ramen was served.
It looks white and light, but the ramen is visually pleasing, with a firm layer of back fat. First, take a sip of the soup. It is clear and has an exquisite refreshing taste that is neither too thick nor too thin. The back fat gives the soup a deep richness, and it has a universal flavor that many people find delicious.
The noodles are a nice soft texture that is satisfying and goes well with the soup. The soup, noodles, and toppings are well balanced and harmonized in this delicious ramen.
